Tasting Notes
True to our style the Seven Springs Unoaked Chardonnay 2015 remains a light wine with clean lines and pure fruit flavours with a typical Overberg minerality. As an unoaked Chardonnay this is quite an aromatic wine, showing floral notes of frangipani, sweet allysum and even orange blossomsand surprisingly a hint of oragne sponge cake. A dynamic palette with a grippy bramley apple acidity and wet pebble minerality.
Being a lighter wine it is easily enjoyed as an aperitif or as a “sundowner”, but pairing it with food is a breeze. Serving it at around 10 degrees Centigrade and with ceviche of fish or sushi is a real winner. It also stands up to lightly spicy dishes or soups and is great with chicken salad and a main fish dish.

This is the vintage we have all been waiting for; in the Overberg, especially the Hermanus area, it was a superb year for all varietals. This is the vintage you want to stock your wine cellar with. The season was preceded by an exceptionally wet year in 2014, making 2015 seem like a dry year, when in fact it was just right. All the climactic conditions aligned, we enjoyed ample spring rains, a cool January and a temperate and dry summer, with only the occasional hot spell.
